The sausage and potato hash I made a while back has been such a hit that I thought I'd try a lighter variation. So this is our smokey version. We had mixed results on this one, T loved it, The Hubs prefered it and The Teens, well, they didn't take seconds which means they weren't keen!
Serves 4
5 medium potatoes, scrubbed and diced (leave the skin on)
8 frankfurters, I used fresh rather than canned
1tbsp olive oil
1 large onion
2 peppers, chopped
50g grated smoked cheese
Method
1. Heat the oven to 160oC whilst chopping the veg. Put the potatoes into a large shallow tray, drizzle with oil and cook for 10 mins.
2. Add peppers and onion and give the tray a good shake to coat everything with oil.
3. Chop the sausages and after 20 minutes add those to the pan bake for a further 10 minutes.
4. Remove from oven and sprinkle with cheese, stir through and serve.
I adore frankfurters!!!! This sounds right up my street x

Mmm, Frankfurters are great - they are way more useful than just as a hotdog. I used them in Pasta Bakes all the time, they're very popular in this household :)
