Remember the enchilada sauce I blogged about last week? Well this is what I made it for, well this and a veggie version for me!
So, on with it...
Serves 4
Ingredients
1 Tbsp olive oil
1 large onion, diced
1 large red or yellow pepper, diced
500g chicken fillets, cubed
2 Tbsp fajita spice mix
6 tortilla wraps
400ml enchilada sauce
150g grated cheese
Method
1. In a large pan, heat the oil and cook the onions and peppers until soft (about 5 mins).
2. Add the chicken and spice mix and cook through.
3. Divide the chicken mixture between the wraps and place in an ovenproof dish, pour over enchilada sauce and top with cheese.
4. Bake for 20 minutes.
