|COOK|cream of vegetable soup

When I received some vouchers from The Orchard at Tesco I instantly started think of recipes I could make with the vegetables on offer.  I've found Tesco's quality and shelf-life of vegetables to have really improved, sometimes you do have to have a good look as some full price packages go out of date the next day which is a tad annoying but if you are willing to spend a few seconds checking the expiry date, then you should be ok.
I love to keep a stack of soup in the freezer for those days where I have no work lunch planned or where I can't think of anything to have.  My soup supply was running low, so soup was an obvious choice to make from The Orchard at Tesco vouchers.
Throwing it all into the slow cooker for 6 hours makes this a super simple recipe too.
3 medium carrots, chopped
3 small parsnips, chopped
2 leeks, sliced
1/4 swede, chopped
4 potatoes, chopped (I used Tesco finest Elfe, they are delicious!)
1/2 head of broccoli
1 litre stock (I use Knorr stock pots, for this I used 1 herb infusion and 1 veg)
1/2 pint cream
1/2 pint milk

1. Place all chopped vegetables into the slow cooker along with the stock.
2. Cook on high in the slow cooker for 6 hours.

3. Once the vegetables are tender and starting to fall apart, use a stick blender to make a smooth soup.

4. Once blended, add the milk and cream and season to taste, add extra milk or water if looking too thick.

5. I freeze my soup in plastic picnic tumblers or re-used fresh soup containers.  This is how I put them in the freezer, once frozen, I pop them out and put them all in a large freezer bag, then when I want one for work I take one out of the bag and place it in my Sistema 'soup on the go' mug.
