So in the interests of putting together this blogpost, I broke my 'no drinking during the week' rule last night!  Yes that's right, just for this post I HAD to test this out and make sure it was ok! I hope you enjoy as much as I did. ;)

I came up with this by having half a watermelon which needed using up.  To freeze, I cut it up and placed it in one layer on a tray until frozen then removed and placed in a bag.  That way it's easier to take the amount you need.

Ingredients - serves 1
Chopped frozen watermelon, enough to fill your glass (de seeded if you prefer)
Juice from 1/2 Lime
A generous shot of rum, I used 45ml of 7 year Havana club because it's my favourite, but you could probably use most spirits, barcadi, vodka, tequila
About 8 mint leaves


Method
Place all ingredients in a blender and pulse until smooth and watermelon resembles an ice slushie.

Put on your sunnies, grab a book, sit out in the sun and enjoy!

This tastes just like holiday to me - delicious!

  1. I think we're all allowed a mid week drink in this weather and your refreshing sounding slushie sounds just the thing. I don't drink much but I do love a cocktail and something fruity like this sounds perfect! :) Enjoy your weekend!

  5. What a great excuse to break your "no drinking". Rules were made to be broken anyway ;) This sounds so delicious and I happen to have a watermelon out in the fridge right now and it's about the little monsters snack time.
