|COOK|meal planning Monday 5 January


So this week marks the start of me attempting to eat healthier to try and improve my health, whilst I appreciate this plan isn't particularly healthy it does contain far more veggie than I have been eating of late! Eventually I know, I must kick my habit of jacket potatoes, but for now, I'm down-sizing and having less coleslaw & cheese ;)

A little late but...

Monday
L - bean & avocado salad
D - jacket potato, coleslaw, cheese & salad
Tuesday
L - jacket potato, cheese & salad
D - wedges & mushroom pancakes
Wednesday
L - soup & pitta
D - mushroom & quorn stir fry
Thursday
L - halloumi salad
D - pasta with creamy mushrooms (recipe next week)
Friday
L - veggies, pitta, olives & tzatziki  
D - bean chilli & rice
Saturday
L - brunch, dry fried egg rolls
D - cous cous with roast vegetables
Sunday
L - tomato & mozzarella pasta bake 
D - veggie left-overs soup
