|COOK|sausage hotpot

You may probably have guessed that sausages are a firm favourite in our household, this hotspot is super simple, quick and really cheap!  It has the nickname of 'sausage surprise' in our home.  I like to serve this in individual serving dishes, but you can just as easily make one large one or cook in the slow cooker
Serves 4
8 sausages cut into 6 pieces each
4 carrots, chopped
2 onions, roughly chopped
4 large potatoes, sliced
600ml stock (I use knorr herb infusion stock pots)
100g grated cheese
1. Pre-heat oven to 160oC gently fry sausages until browned.
2. Put sausages, carrots & onions into dish (or split between dishes if you want individual portions) pour over half of the stock.
2. Arrange the potatoes over the top and pour over the remaining stock, sprinkle over grated cheese and pop in the oven for 25-30 mins.
Warning! This comes out really hot if serving individual servings!
Easy to adapt for vegetarians or dieters, just swap for suitable substitute sausages.
