Vegetarian Tartiflette

I say 'vegetarian' because the traditional method contains chicken stock or beef dripping, obviously the picture is not veggie sausages, this was my Hubs' dinner!

Serves 4


1 tbsp olive oil
1 onion, finely chopped
300ml vegetable stock
6 medium potatoes with the skin on, cut into about 6 pieces
200ml double cream cream
250g grated cheddar cheese
Fresh thyme


1.Preheat oven to 180°C. 
2. Heat oil in large saucepan, gently fry the onion until soft, add stock. 
3. Add potato and cook until tender about 10 mins, add cream. 
4. Tip potatoes and sauce into a 1 1/2 pint baking dish, scatter over thyme and cheddar, bake for 35-40 mins until golden and bubbly. 

I'm going to let this one speak for itself, simply delicious!!!! Enjoy! Lx
