So, I finally got round to foraging some nettles to make some nettle soup. Oh my goodness, it's amazing! Will be making more for the freezer this weekend.
I had planned on following a recipe, but in my true style I had to have a fiddle and in my opinion, it was certainly worth it! ...and I didn't even get stung.
Ingredients
1 onion, diced
1 tbsp olive oil
1/2 carrier bag of nettle tops
6 small new potatoes, chopped
400ml vegetable or chicken stock
1 tbsp dried tarragon
200ml double cream
Salt & pepper to taste
Method
1. Give the nettle tops a good wash and shake dry.
2. In a large saucepan, gently fry the onion in the olive oil until soft and translucent.
3. Add nettles, new potatoes, stock & tarragon and simmer until potatoes are cooked through, about 20 minutes.
4. Liquidise in a blender until nice and smooth.
5. Pour in the cream and warm through.
Freezes well, costs next to nothing!

Leandra...I'm a little sceptical of this? Saying that Im wondering if i could make it? What would i be expecting ti to taste of? X (ps also what made you think of eating nettles? or am I being dozy? are they MEANT to be eaten?
ReplyDeleteha ha it's really easy - honest. Yes it's fine to eat nettles, they contain a lot of iron which is one of the reasons I wanted to try it. It tastes a bit peppery and a bit like watercress soup, one of my favourites! lots of people say they get stung when collecting them, even through gloves, but I didn't. I'll definitely be making it again! xxx
