|COOK|tomato, courgette & chickpea soup

This recipe kind of just happened and it's blooming lush so I thought I'd share it with you!

Serves 4

2 tins chopped tomatoes
1 tbsp olive oil
1 stock cube
1 tbsp pesto
1 tbsp tomato purée
1 medium courgette, chopped
1 red onion, diced
1 tin chickpeas

  1. In a saucepan gently fry onions in olive oil until translucent.
2. Add courgette and 1 tin of tomatoes.
3. Blend the other tin of tomatoes, then add to the saucepan, along with stock cube, pesto & tomato purée.
4. Fill one of the empty tins with boiling water and add to the saucepan too, bring to the boil, then simmer for 20 mins.
5. The soup will reduce slightly, add the drained chickpeas and cook for further 10 mins.
6. Swirl on a bit of cream if you fancy a bit of indulgence!

Freezes well, make a couple of batches up for quick lunches!
I actually used chilli oil instead of olive oil for a bit of a kick and that was a nice alternative.
Swap courgette for other veg you have hanging about.
Use beans instead of chickpeas if you don't have any.
Add a pack of fried pancetta to all or some if you are a meat eater :)
