Serves 2
Ingredients
3 large Carrots cut into batons
1 tbsp dried chives
2oz butter
Juice 1 fresh lemon
1 tbsp honey
Method
1. Place all ingredients in a pan, pour boiling water just up to the carrots but not covering them.
2. Bring to the boil then reduce to a simmer, simmering for 15 minutes or until the carrots are tender, add more water if carrots are still hard when the water has boiled off.
3. Serve.
